RATATOUILLE

Ingredients
-500 g medium-size tomatoes
-1 finely sliced onion
-1 red capsicum
-300 g zucchini
-300 g eggplant
-2 cloves of crushed garlic
-1 bouquet garni (bunch of herbs)
-1 sprig of thyme
-salt & pepper

Preparation of vegetables:
Peel and cut the tomatoes into quarters, dice the red capsicum, slice the onion, crush garlic and dice the zucchini and eggplant.

In a large casserole, gently fry the onion in a little olive oil until the onion is translucent.

Add the tomatoes, bouquet garni and garlic and season with salt & pepper.

Leave the vegetables to cook.

Sauté the zucchini in a frying pan, remove any excess liquid and add to the casserole.

Do the same with the eggplant. Add the thyme.

Let the vegetables cook about 30 minutes.
