AIOLI (salt-cod dish)
Ingredients
- 4 150 g thick fillets of cod
-200 g small or large sea snails
-4 small zucchini
-100 g green beans
-4 large potatoes
-8 cherry tomatoes
-coarse salt

Sprinkle coarse salt on both sides of the cod fillets and leave 15 minutes while preparing the vegetables and aioli mayonnaise.
Add the egg yolks, mustard and 4 pinches of salt into a bowl. Peel the garlic cloves and crush them two times.
Whisk this mixture while slowing incorporating the two oils in a dribble. Add the lemon juice and continue to whisk. Put in the refrigerator.
Wash the vegetables and cut the zucchini into four.
Boil the potatoes whole in salted water for 20 minutes, then the green beans for 8 minutes and zucchini for 4 minutes.
Strain the vegetables and keep them warm.
Boil the cod fillets for 3 minutes in simmering water, as soon as the water has begun to boil.
Strain the fillets and serve with the vegetables, sea snails and tomatoes cut in halves. Serve the aioli mayonnaise separately.
