ANCHOVY PASTE

Ingredients
-200 g anchovies in salt
-2 cloves of garlic
-1 teaspoon of vinegar
-15 cl olive oil
-pepper

Clean the anchovy fillets: open lengthwise, remove the backbone and tail. Rinse well.

Crush the anchovy fillets in a mortar with the garlic, pepper and vinegar.

Dribble the olive oil into this mixture while mixing until a fine paste is obtained.

Serve fresh vegetables with this paste, such as tomatoes, cucumber, celery, capsicum, raw cauliflower, artichokes and radishes.
